Our Cab Sauv is very sophisticated, well-balanced and created in the Bordeaux style. The grapes come entirely from the Diamond JEM Vineyard in the Westside part of the Paso Robles appellation. The old vines at Diamond JEM are meticulously hand-trained to ensure maximum quality. You can shelve this wine for 4-5 years or open and drink it immediately. We recommend that you decant the Cab for an hour before drinking.
